Greek Yogurt Chicken Salad

Have you ever had a salad that you love SO much, that also makes you feel NO guilt?  It’s a wonderful thing!  This Greek Yogurt Chicken Salad is one of those recipes.  I love this recipe so much that I make it and keep it just for myself (I know, I’m terrible).  We all have that place in the back of the fridge that your husband doesn’t even know exists!  😉

I wish I could remember where I found this recipe.  I remember eating it somewhere and kind of pieced it together.  If it was your house I had it at, please tell me!

Are you ready?  This is simple, delicious, healthy, and guilt free!

Ingredients:

2 cups grapes

1/2 cup celery

1/2 red onion

1 cup sunflower seeds

1-12.5 oz canned chicken

16 oz plain greek yogurt

Salad Ingredients

 

Steps:

  1. Cut grapes, celery, and onion to desired size
  2. Add sunflower seeds, chicken, and yogurt

This took me about 30 minutes to put together, from start to finish.  I ate it for lunch for 4 days.
Now, remember the point of this blog?  Mix it up!  What do you have on hand?  Are grapes expensive right now?  This recipe originally had cashews in it; I switched it to sunflower seeds.  Also, I think the original recipe had apples in it.  I couldn’t find my notes last time I made it, so I made it with just grapes.  If I can hammer home one thing on this blog, it would be this: Don’t Be Afraid to Deviate and Make it Your Own!
